Xanthan Gum, Gluten Free 227g
Xanthan Gum is made from the outer layer of a tiny, inactive bacterium called Xanthomonas campestris. Xanthan gum works firstly as an emulsifier, secondly as a thickener by increasing the viscosity of liquids and batters, and thirdly, it can create a creamy texture.
It is an excellent all-purpose thickener for dressings, gravies and sauces. In gluten-free baking, its unique ability to hold small particles of food together makes it the ideal substitute for gluten. Only a small amount is required in recipes, so it goes a long way.
